Shepherd and producer of the famous local cake with the Biot recipe!
This centuries-old cake is part of the local heritage.

Description

At once rustic and precious, it was a delight for senior citizens when they gathered in the village of Biot for weekly vespers
(snacks).
They would cook the snouts under the ashes and, it is said, « washed down with strong pints of wine, these agapes gave them a youthful ardour ».

The legend :
In the mists of time, when the river rumbled after the winter rains and the melting snow, the inhabitants took refuge a little higher up on the mountain overlooking Brassac. At certain times, they may even have settled near this little village of Biot, whose name means ‘hamlet’ in Indo-European. The demon of the flooding river was a « tarasque », and it was appropriate to appease it and offer it gifts. As a symbol of wealth and divine gift, bread was reserved for her. Thus was born « le casse museau » made from sheep’s milk, in a secret still jealously guarded because it has the power of exorcism.
